After the excesses of yesterday’s rich, in-your-face steak I want to bring you something lighter and altogether more cleansing. It’s a sneaky little salad made using Watermelon, Halloumi Cheese and charred Tomatillos: simple, fast and a really fun and interesting mix of flavours.
